This 3-inch thick ribeye was smothered in a healthy helping of salt and pepper before getting sealed up with a few sprigs of rosemary for a 1hr water bath at 128°F / 53.3°C. This grass fed meat slab got a grand finale full of flaming hot cast-iron for its finishing touches. . . . . Start the weekend off right with a solid #sousvide sesh. #anovafoodnerd customer photo of the day! @eatwithmao with perfectly cooked #sousvide pork belly. They started by dry-rubbing with salt, sugar, dried bay leaves, and black pepper. While that flavor party was getting started, they set the bath to 140°F / 60°C. They bagged up the flavor bomb and gave it a two hour soak before firing up the cast-iron skillet for a fantastic finish. They decided on 30 minutes of medium-heat in order to get that skin cracklin’. Final step was a nice precise slice to show off that juicy interior . . Perfectly cooked pork? They bagged up the steak with thyme, rosemary, and a bit of butter, and submerged for 1 hour at 128°F / 53.3°C. When the steak was done soaking, they fired up a cast-iron skillet and gave the steak a quick sear on both sides for some beautiful color. . . Never overcook steak again.
