Lawyer by trade, #anovafoodnerd at heart! Waymond Wesley started his journey to delicious meals in 2017. Not to be outdone by a friend who had just purchased an Anova Precision Cooker, Chef Way decided to start his sous vide journey. Present day, Way is throwing down some viral videos on TikTok and Instagram Reels using his Anova, and spreading sous vide love all across the land!

How have you progressed as a cook?
I used to cook a lot of steak, then recently realized there is more to it. I discovered Kenji Lopez-Alt, and started learning the science behind sous vide and it took off from there. The passion I have for cooking brings balance to my life.
And you are a private chef on the side now as well?
I started as a home cook and now have a private chef hustle on the side. Did a Valentine's meal and had 15 lamb chops I needed to prepare. Cooked them all at 130°F and seared to serve. Made it crazy easy! I like to cook things precisely and the sous vide helps me maintain the quality and technicality of the dishes I make.
Favorite things to cook?
I make everything from steaks, pork tenderloin, pork belly, oxtails, short ribs, lamb, duck, lobster, octopus, eggs, cheesecake and creme brûlée.
How did you go viral?!
That TikTok algorithm! I went viral in September of 2020 after finally deciding to showcase my food on TikTok. Everyone kept telling me to do it and I finally decided the time was right.
What do you want more people to know about cooking sous vide?
Through showcasing sous vide cooking on my socials I hope to dispel the assumption that sous vide cooking is unapproachable or pretentious.
Do you have any long term goals?
My long term goal is to open a restaurant with a team of dedicated and experienced chefs and day to day operators.
