Perfect Medium Mushroom Swiss Burger

There isn't much in this world that is better than a good burger but most everyone's perception of a burger is formed by their local fast food chain. We aim to fix that. When you go out for a good steak, you don't want a steak that has been cooked down so much that it's gray and dry. You want something that is pink and moist with a fantastic crust surrounding it. With Anova, you have the power to cook a burger to your specific liking. In this recipe, we'll be preparing a perfect medium mushroom swiss burger. Ingredients:
  • 1 lb lean hamburger meat
  • 2 sprigs rosemary
  • 1 cup sliced mushrooms
  • 4 slices Swiss cheese
  • 1 tbsp butter
  • 4 hamburger buns
The first thing we'll need to do is set our Anova to 140 degrees to achieve our perfect medium. While our water comes up to temperature we can prepare our patties. Simply enough, form (4) 4 oz patties and season liberally with salt and pepper and top each burger with 1/4 stem of rosemary. burger1 Next we're going to seal our burgers in a zip top bag using the water submersion method. You can use a vacuum pack machine if you'd like but the pressure from the machine will compress your burgers. When you use the submersion method, it will create a light vacuum pack and keep your burgers uncompressed so the meat is tender. If you're not familiar with the water submersion seal method, place your burgers into a zip top bag, seal the bag almost all the way but leave around 1 inch unsealed so air can escape. Start dipping the bag into water so the water can push most of the air out of the bag as you lower it. Once you get as much of the air out as you can while leaving the opened portion of the zip top bag out of the water to prevent water leaking into your food, finish zipping the final inch, sealing the bag. burger2 Now that we're sealed, we're ready to cook our burgers at 140 degrees for an hour. burger3 Once your hour is up, heat your butter and remaining rosemary in a skillet and sear off each burger to give it a nice crust. Once each burger is seared, add your Swiss cheese to the burgers while they are resting, remove your rosemary from your butter and add your mushrooms. Season with salt and pepper and cook until the mushrooms start to soften. Once your mushrooms are ready, top your burger with mushrooms. burger4
