Recipe: The Perfect Pork Chop

Pork is one of those ingredients that when done right is incredible, however, when it's overcooked, it's drier than the Sahara desert. With Anova, you can make perfect pork chops every single time and this is how you do it. Ingredients:
  • 1 large pork chop
  • 2 tbsp butter
  • salt and papper
Start off by setting your Anova to 140F, while your water heats up we can prepare our pork. Take your pork chop and season generously with salt and pepper. Next, you can seal your pork chop in a vacuum seal bag, or use a zip top bag with your favorite method to remove as much of the air inside as possible.

Once you have the pork sealed and the water is at 140F, set your pork chop into the water bath and cook for 45 minutes. Now that 45 minutes are up, add 2 tbsp of butter to a hot pan and sear your pork chop on both sides. Suggested serving for your pork chop is par boiled fingerling potatoes, sautéed in the same butter sauce.
