Hailing from Pennsylvania, Derek has enjoyed cooking for a while, but he wasn't always the best at it.
Derek turned to sous vide after finding himself eating a lot of quick (aka unhealthy) frozen foods. He comes from the tech sector and knew there had to be a smart cooking device that could solve his problems in the kitchen. So, started researching smart kitchen tools that would help him crank out consistently delicious meals without having much cooking experience at all.
Sous vide was the natural answer, and his Anova love started there. About a year ago he purchased the
Anova Precision Cooker to join his kitchen arsenal.

Derek hasn't always been a culinary boss. It was his love for technology and a yearning to learn how to kick butt in the kitchen that lead him to Anova. Sous vide was calling his name, and it has taken him from the culinary equivalent of an "Average Joe" to a sous vide pro.
Thanks to sous vide, Derek became enamored with cooking. He felt confident in the kitchen and wanted to share all about the technique that changed the way he looks at food and cooking.

Derek doesn't think there's anything better to convince someone about the glorious world of sous vide that a great photo of a meltingly-tender cut of meat. Derek's advice for a friend on the fence?
"Show them the inside of a perfectly cooked, edge-to-edge steak. After they see that, there are usually no more questions!”

Sous Vide Salmon with Hollandaise by Derek Gaughan
This simple sous vide salmon recipe transforms a super-tender and flaky salmon filet into an even more elegant dish thanks to sous vide hollandaise sauce.
Hollandaise is notoriously tricky; not because of the ingredients or individual steps to make it, but due to the timing. Thanks to sous vide, you can make the easiest hollandaise sauce. How easy? You literally toss all of the ingredients into a bag and cook it - don’t even mix it beforehand! Get to cooking and share your #anovafoodnerd fam love.
Here's how simple it is to make Derek's
sous vide hollandaise recipe.
- 4 Tbs Butter
- Egg Yolk
- 1 Tsp Lemon Juice
- 1 Tsp Water
- 1/2 Shallot, diced
- Pinch of Cayenne
- Salt to taste
- Pre-heat water with Anova to 148F
- Add all of ingredients for Hollandaise sauce into a large Ziploc bag. Mixing isn’t important, since it will be blended later.
- Cook for 45 minutes
- Remove your Hollandaise mixture from the water bath and pour it into your blender. Blend on a medium speed until the mixture is a smooth light yellow. Note: your mixture will be very separated when removing from your sous vide bath - this is very normal.
NOTE: The hollandaise can be held in the bath while cooking the salmon!
